1. Rhubarb and Cream Cheese Pastry

This puff pastry dessert is a mouthwatering work of art. With its thin layer of cheesecake and red and green stems cut into ribbons, it’s such a pretty dish to present at the table. The colours may change depending on the rhubarb variety, which is what gives this dessert its striking checkerboard effect.

2. Fruit Salad with Confit Rhubarb

Rhubarb is fragile, and can’t handle any direct heat. If it’s put into an airtight bag with sugar and water, then immersed in a boiling water bath for a brief time, it becomes candied without breaking apart thanks to sous-vide cooking.  This gentle heating method will produce tender pieces and a slightly sweet syrup, which is then used in our chic fruit salad recipe.
