This side dish is an anthem to autumn. Prepared like a gratin dauphinois, the squash, carrots and apple are thinly sliced and layered in a gratin dish. After it comes out of the oven, drizzle it with apple jelly for an irresistibly sweet touch.

Thanks to its fibrous texture, spaghetti squash can be served just like you would a pasta! In this recipe, it mingles with confit tomatoes, golden onions and feta cheese.
7. Pressure Cooker Lentil and Squash Curry
A lentil curry can be ready in 35 minutes thanks to the power of the pressure cooker. Simply add cubed butternut squash, green and red lentils, broth, diced tomatoes, coconut milk and spices for a rich and tasty curry, and serve with a side of naan bread to mop everything up!
