It’s the perfect opportunity to take advantage of this delicate fruit and put it to good use in our summer recipes. It only takes three ingredients to make a raspberry jam that brightens up the morning: fresh raspberries, sugar and lemon juice. Bring everything to a boil until a candy thermometer reads 219°F (104°C), and that’s it!

When raspberries are at their peak, they can be stored in the freezer to eat year-round. You can thaw them later in the year and prepare this pudding, which also contains blueberries.

3. Raspberry Crumble Tart
