8 Fall Vegetables to Cook with Now

Autumn is finally upon us! And what better way to welcome the changing of the seasons than with the help of seasonal vegetables. Carrots, parsnips, squash and more, they’re simply delightful recipes rich in fall flavour. Check out eight of our favourites to cook them.

1. Carrots

Let’s start things off with carrots. This fall vegetable par excellence is so versatile, as it can be used in so many dishes, like soups and stews, or even as a garnish for sandwiches. But we prefer having carrots be the star of a recipe, like in a carrot muffin or cake, or even as a delectable side dish like the one below.

2. Squash

Squash is the ultimate in fall vegetables, and this gourd comes in many different varieties! It can be used in many ways, but we love it in this pasta casserole that also includes another fall veggie, the leek!

3. Parsnip

Parsnip is a root vegetable that sort of looks like a cream-coloured carrot, and it is at its peak starting in the fall. It’s earthy and starchy, and tastes great roasted and served alongside meat, like in this cozy veal recipe.

4. Green cabbage

Who doesn’t enjoy green cabbage in a crunchy slaw or salad? But know that there are many ways to enjoy this veggie in the fall, and no, we’re not talking about the tasteless boiled cabbage from your childhood! Try slicing it thinly and then cooking it in a skillet; the cabbage takes the form of a “noodle” and can be a great replacement for pasta.

5. Beets

Sweet, earthy and colourful, there’s just something about beets. They can be pickled and braised, added to salads and so much more. For a unique recipe, try puréeing them into a smooth, hummus-like dip. Great for crackers and crudités!

6. Onions

Onions can be found year round. But they tend to be harvested in late summer, meaning they are at their peak by fall. We know you likely always have a bag in your kitchen, so be sure to try this fragrant brown rice and lentil dish with caramelized onions.

7. Kale

Yes, this bitter leafy cabbage can be enjoyed many ways, particularly in chips. But it can also be enjoyed in so many more ways; it is especially tasty in a stir-fry. After all, it wilts down just enough to get rid of its tough texture. It’s chewy, but still has bite!

8. Brussels sprouts

Sure, Brussels sprouts may have a reputation for being unpopular with kids, but this leaf vegetable is definitely underappreciated. Brussels sprouts taste absolutely wonderful when roasted, making for a flavourful side dish.
