6 Recipes for Breakfast in the Garden

We were inspired by the beauty of an abundant vegetable garden to put together a few breakfast recipes that can be enjoyed in the garden. Check out these fresh and colourful dishes that radiate summer.

1. Pear and Lavender Mimosas

This delicate mimosa is perfect for a seasonal brunch. To some effervescent Prosecco, add a simple syrup made from ripe pears and dried lavender. The taste of the latter is mild and not too overpowering, leaving you with a gently floral cocktail.

2. Charred Trout and the Perfect Egg on Toast

For the main course, serve some trout that’s been brushed with lime juice and then broiled until slightly charred. Serve the fish on a homemade ciabatta bread and top with an egg. Cook the egg using a precision cooker at 149°F (65°C) so that the yolk is perfectly runny and the white is just set. Garnish with fresh caperberries, radishes and microgreens for a visually appealing result.

3. Seeded Ciabatta Breads

During summer vacation, take advantage of the extra time available by undertaking baking projects, such as these ciabatta breads, which serve as the base of the trout recipe above. The dough is made using a poolish, which is a quick starter that allows for a well-aerated bread, made very soft thanks to the addition of olive oil. Sesame, poppy and anise seeds are also added for even more flavour.

4. Heirloom Tomatoes with Herb Dressing and Mozzarella

Highlight seasonal tomatoes with this simple salad recipe. Arrange sliced heirloom tomatoes, cherry tomatoes, sliced cucumber rounds and fresh mozzarella on a large serving dish and drizzle with a dressing loaded with garden herbs, Parmesan and honey. It tastes just like summer.

5. Sweet and Savoury Dutch Baby Pancake

A Dutch baby is a pancake that’s been cooked in a very hot cast iron skillet in the oven until puffy and golden. It’s flavoured with sweet clover and then generously filled with ricotta cheese, prosciutto and whatever ripe fruit you might have on hand. We recommend eating it right out of the oven so that you can appreciate its soufflé effect.

6. Raspberry Granita with White Chocolate and Tarragon Crémeux

To cap off your brunch in style, prepare this flavourful granita using garden raspberries. Spread it over a creamy combination of white chocolate, cream, tarragon and sour cream. And for a finishing touch, garnish with even more raspberries and edible flowers, such as pansies.
