Freezer Bags and Airtight Containers
The first step in freezing aromatic herbs is to wash them, then dry them thoroughly with a paper towel. Chop the stems and leaves, then put them in the freezer for a few hours on a baking sheet before transferring everything to a clearly identified freezer bag or airtight container. Last step: find a spot in your freezer where you’ll be able to access them easily, so you don’t have to hunt for them every time you need them.
Ice Cube Tray
Freezing herbs in an ice cube tray is another convenient and efficient method of preserving them. The technique is similar to the first one, as it also requires you to start by washing and drying the herbs. Once you’ve chopped the stems and leaves, divide them between the compartments of an ice cube tray and cover them with water. Put the mould in the freezer for a few hours until the ice sets. Then remove the ice cubes from the tray and put them in an airtight container or freezer bag.
Instead of water, you can use olive oil to freeze your herbs in ice cubes. The principle is the same. Parsley, cilantro and basil can keep for several months using this method.
