How to Prevent a Springform Pan from Rusting

Springform pans are very convenient for pastry making. They make it easier to remove from the mould dense cakes like our Best-Best Chocolate Cake, delicate preparations like cheesecakes and upside-down desserts with fruit. This type of baking pan is not without faults, though: It’s very sensitive to rust. Here’s a tip to prevent that from happening.

What Is a Springform Pan?

This type of mould features a hinge that, when locked, clamps the base in a groove at the bottom of the side wall. To release this removable base, you just need to unclamp the mechanism. Using and cleaning this baking implement is easy, except that points of rust can appear if you don’t dry it completely before storing it.

The solution?

Wash the pan as quickly as possible and put it back in the oven to dry, taking advantage of the residual heat left after baking your cake. A simple, efficient trick that works every time.
