1. Asparagus milk
In this crepe recipe, asparagus is used from tips to ends. By infusing the trimmings in hot milk, the mixture gets a light asparagus flavour and, if desired, you can garnish the crepes with asparagus tips as a reminder of what’s inside.

2. A crunchy topping
To add some texture to a meat dish, salad or soup, asparagus trimmings can be finely sliced using a vegetable peeler. Brown them in a pan until crisp and season to taste.
3. Creamy soups
By using asparagus trimmings in a soup, such as our cream of green vegetable soup, you’ll get that great, fresh asparagus taste. Simply strain the soup to remove the fibres and you’re left with a smooth, velvety texture.

4. A savoury sauce
To pair with meat, make an asparagus-flavoured sauce. Do so by infusing asparagus trimmings in veal stock for five minutes or so in order to give it a unique vegetal flavour. You can then thicken it with cream. The sauce is delicious with veal fillets or cutlets.
5. Freeze them for later
In order to accumulate enough asparagus trimmings for a recipe, freeze them in an airtight bag. Even though their texture will change, their taste won’t be affected when infused in a sauce or puréed for a soup. You can avoid colour and textural changes by blanching them for a couple of minutes and letting them cool before freezing.
