August 24–28, 2020: What to Cook for Back-to-School Week

Back-to-school season is at our door, and we’re all trying to get back to a certain routine. This fall won’t be quite the same as the return to class of previous years, and we know you’ll be looking for quick, delicious and straightforward recipes.

Monday: Seared Tilapia and Vegetable Stir-Fry

A stir-fry is the ultimate quick and no-fuss dish, and this one is no exception. The vegetables can be eaten as is, with the tilapia, or in a taco with sour cream and salsa. Let the kids decide and they’ll be more inclined to eat (and enjoy) their meal.

Tuesday: Sesame and Honey Marinated Tofu Skewers

This dish, with all its fresh veggies, still has a foot in summer’s harvest. What’s more, it tastes great the next day for lunch. Marinating the tofu in advance saves time and makes prep even easier.

Wednesday: Lunch Bowl with Egg, Vegetables, Hummus and Toasted Pita

We can’t say it enough: eggs are so versatile and are the perfect addition to any back-to-school meal! Brush the pitas with oil, sprinkle with spices and toast them in the oven for a crunchy side.

Thursday: Tomato and Caramelized Onion Grilled Cheese Sandwich

The kids will love it so why not  give them what they want? This grilled cheese sandwich makes a generous meal with the addition of tomatoes and arugula. It’s a dinner idea that only takes 30 minutes to make and will be a hit with the family!

Friday: Ricotta and Sausage Pasta

Getting through the first week back at school deserves a dish everyone will love! Keep things simple with pasta tossed with a tomato coulis and sausage, topped with ricotta.
