October 12 to 16, 2020: What to Cook with Squash This Week

If you picked up more squash than necessary for your Thanksgiving side dishes, use whatever’s left for this week’s meals. Butternut, spaghetti, acorn… There are so many ways to cook with the different varieties, and yes, that includes dessert, too!

Monday: Curried Pork Chops with Roasted Squash

Who doesn’t enjoy weeknight pork chops? But if you’re looking for a new way to serve them, cooked in a sweet and spicy maple curry sauce alongside roasted acorn squash is the way to go, especially as the cool fall weather kicks in. 

Tuesday: Beef and Squash Fried Rice

Fried rice is your classic quick and easy meal idea, especially given its versatility. You can add almost any protein and veggie, and it’ll still be absolutely delicious. This recipe calls for ground beef and butternut squash, and we think it’ll become your new favourite version!

Wednesday: Squash and Bacon Pita Pizzas

There’s nothing simpler on a busy weeknight than pizza...without having to roll out the dough! Make these single-serve versions on pita bread topped with roasted squash and crisp bacon, making pepperoni and cheese a thing of the past.
