July 12 to 16, 2021: Road Trip Meals to Enjoy This Week

Hitting the road this week with the family or some friends? We’ve got a few recipes for you to make before you head out that’ll turn the drive into a tasty affair. Pack up the cooler and let’s go!

Monday: Cucumber Melon Gazpacho

During the summer, we’re all about cold soups. And this refreshing gazpacho is the perfect road trip companion. It’ll stay cool in an insulated container and will be the ideal lunch when you make your first pit stop of the day.

Tuesday: Black Bean Burrito

A yummy loaded burrito is just the ticket to get you through a day of driving. Munch on this cross between a burrito and a chimichanga, which is virtually spill-proof, given that browning it in a skillet helped seal the tortilla. (You don’t want a messy car, after all!

Wednesday: Mango Chicken Salad Sandwich

There is nothing handier than a sandwich when hitting the open road! Prepare the chicken salad and slice the fruit and veggies ahead of time, and you can assemble your sammies once your stomach starts to rumble.

Thursday: Tabbouleh with Sweet Potato, Feta and Currants

The best part about this savoury yet sweet tabouleh is how customizable it is! Pack your salad in a bento box and pair with a protein of your choice: cooked shrimp, chicken, or even a hard-boiled egg.

Friday: Broccoli Quiche

Quiche is a great, protein-rich meal that can also be filled with good-for-you veggies. (We may have snuck in some bacon in this one, too.) Simply let cool, slice into individual portions and wrap them up before heading out the door.

Snack: Sweet Potato Breakfast Muffins

Muffins make a great snack. But what we adore about these muffins, which are packed with sweet potato, oats, bran and pumpkin seeds, is that they are a filling breakfast before hitting the road. They’re so hearty, they’ll make a satisfying quick lunch, too.
