March 14 to 18, 2022: What to Cook This Week

What’s on the menu for the week to come? We’re kicking things off with a beautiful (but simple!) cod dish, ending the week with a cheesy pasta recipe, and offering a few other tasty meal ideas in between. Let’s go!

Monday: Pan-Fried Cod with Ginger, Zucchini and Avocado

Enjoy fish a bit differently with this gorgeous cod dish. Paired with zucchini and avocado, it is served with an umami-rich broth that is out of this world.

Tuesday: Crispy Tofu with Barbecue Sauce

If the kids aren’t a fan of tofu’s texture, then give it a little crunch! Cut the tofu into slices or sticks, dip them in beaten eggs and roll them in panko breadcrumbs. Once browned in the pan, this tofu becomes ultra-crispy and something the family will ask for again and again.

Wednesday: Leek and Goat Cheese Omelette

Omelettes are your best friends for easy dinners. After all, eggs have protein and this particular recipe is ready in just 30 minutes! Goat cheese gives this family-style dish a soft creaminess, topped with subtle sliced leeks. 

Thursday: Curried Pork Chops with Roasted Squash

Inexpensive, quick and easy, there’s a reason why pork chops are a weeknight staple! We give the star protein a curry kick, as well as coat it in a seasonal maple syrup glaze, and then serve it with acorn squash and rapini.

Friday: Spaghetti with Veal and Mushrooms au Gratin

Spaghetti is a regular go-to for dinner, but why not go beyond the usual ground beef sauce with Parmesan topper? This recipe calls for a veal and mushroom sauce, topped with a slice of semi-firm washed rind cheese (like Oka or Gouda), which then melts under the broiler. Perfection!
