What’s for dinner this week? From fried rice to a chili poutine, here are five fall-ready meal ideas made with simple, affordable and easy-to-prepare ingredients.

Monday: Lasagna Soup

Lasagna is always an excellent meal idea for this time of year. But given that the dish has quite a bit of prep behind it, try this soup version instead. You’ll find all the usual flavours, including Italian sausage, beef broth and diced tomatoes. It’ll take a bit of time to cook, but thankfully, you only need 15 minutes to prepare everything.

Tuesday: Fish Sloppy Joe

Traditionally served with ground beef and seasoned tomato sauce, this recipe serves white fish between two burger buns instead. This version has the fish incorporated into a plentiful sauce consisting of peppers, chili powder, tomatoes and black beans. The results are these delicious, easy-to-prepare and budget-friendly sandwiches.

Wednesday: Chicken, Mushroom and Ginger Fried Rice

Cosy, simple and tasty, fried rice is always a tried-and-true favourite. This recipe includes chicken, fried egg and mushrooms, along with a soy- and ginger-based sauce. It makes for a flavourful weekday dinner at an affordable cost.

Thursday: Tofu Shish Taouk Plate

Inspired by chicken shish taouk, we decided to develop this tofu version. The plant-based protein is coated with a blend of sour cream, honey and spices reminiscent of the classic dish’s flavours. Serve alongside tabbouleh and hummus, for a meal the whole family will enjoy and that’s ready in just 30 minutes.

Friday: Pork and Bean Chili

During fall, making chili is pretty much a seasonal activity! This version, which includes fries and cheese curds, is reminiscent of poutine. Brown the bacon, ground pork and red bell pepper, and then add the beans, to create the perfect warm and comforting topping for your fries. It’s a great way to start the weekend!
