Believe it or not, but fall officially begins on Monday! So for this week’s meal plan, we’re putting seasonal ingredients front and centre: tomatillos, kale, beets...just so we can prolong summer for a few more days. And for your weeknight sweet tooth? We’re readying for apple season with this microwaveable apple crisp, ready in just 15 minutes.

Monday: Pressure Cooker Lentil and Kale Soup

Meatless Mondays continue with a cozy recipe you can whip up in your pressure cooker. This lentil and kale soup is the perfect meal to ring in the first day of autumn.

Tuesday: Almond-Crusted Fish with Quick Yellow Beets and Chive Oil
