Between office parties, that pre-holiday workload and the children’s excitement growing with each passing day, it’s good to take a moment in all the madness to relax and prepare simple meals: a curry in a hurry, an exotic chicken dish and a reinvented classic.

Monday: Pressure Cooker Lentil and Squash Curry

Wednesday: Spicy Chicken with Cantaloupe and Chorizo
