February 24–28: What to Cook This Week

It’s the final week of February! While January seemed to drag on, this month just flew by. How to end it on a tasty note? We’ve got quick and easy recipes that’ll turn dinner on its head, from a vegan tofu and veggie dish to a classic comfort duo with a unique twist.

Monday: Sautéed Eggplant, Tofu and Cucumber with Peanut Sauce

Searching for something new to enjoy on Meatless Mondays and beyond? This recipe is rich in texture (hello, crunchy peanuts!) and umami flavour, and your vegan friends will love it, too!

Tuesday: Ginger Pork Stir-Fry

Ground chicken cooked with a slew of fresh ingredients and a couple of our fave fermented sauces (soy and fish, specifically)? Yep, everyone will simply devour this citrusy and aromatic Southeast-Asian larb tonight! You might have to make a stop at your nearby Asian grocery store on your way home from work to pick up some kaffir lime leaves and lemongrass but, trust us, the detour will be worth it.
