In this recipe, we use it the way we would for lemon meringue pie, replacing lemon juice with a speedy homemade sea buckthorn juice. Hurrah for local ingredients!

Sea buckthorn berries are small, orange, tart and astringent, and are always sold frozen. They have been cultivated in Quebec for the last few years and can be found in health food stores and specialty grocery stores.
