Ask your butcher to prepare your turkey. The legs should be separated from the carcass and the breasts should be deboned. You can also buy 2 turkey breasts and 2 turkey legs for a total weight of about 9 lb (4 kg). If you have enough room in your roasting dish, you can add the turkey neck and a few pieces of wings. Otherwise, you can use these extra parts to make a great homemade broth.
