Ingredients: 1 cup (150 g) unbleached all-purpose flour; 1/4 cup (25 g) cocoa powder; 2 tbsp cornstarch; 1/4 tsp salt; 1/2 cup (125 ml) virgin coconut oil; 3/4 cup (100 g) icing sugar; 1 egg; 1 egg white; 1/2 cup (60 g) sweetened grated coconut; 3 oz (85 g) milk chocolate, coarsely chopped; 1 tsp (5 ml) virgin coconut oil

Preparation

Cookies
- In a bowl, combine the flour, cocoa powder, cornstarch and salt.
- In another bowl, cream the coconut oil and icing sugar with an electric mixer. Add the egg and mix until smooth. With the machine running on low speed or with a wooden spoon, stir in the dry ingredients.
- With the rack in the middle position, preheat the oven to 350°F (180°C). Line a baking sheet with a silicone mat or parchment paper.
Toppings
- In a bowl, lightly whisk the egg white. Place the grated coconut in another bowl.
- Using a 1-tbsp (15 ml) ice cream scoop, shape the cookie dough into balls. Finish rolling the balls with your hands. Arrange on the baking sheet evenly spaced out.
- Roll the cookies in the egg white, then in the coconut. Return to the baking sheet. With the tip of your thumb or the back of a measuring spoon, make a small well at the centre of each cookie. The cookies should have a diameter of about 1 ½ inches (4 cm). If the edges of the cookies crack, lightly press on the dough to seal.
- Bake for 12 to 14 minutes or until the coconut is golden. Let cool completely, about 1 hour.
- In a glass bowl, melt the chocolate with the coconut oil for 1 minute in the microwave oven, stirring halfway through cooking. Whisk until smooth.
- Using a spoon, divide the chocolate mixture among the cavities at the centre of the cookies. Let the chocolate set at room temperature, about 2 hours. The cookies will keep for 1 week in an airtight container at room temperature.
