Ingredients

- 8 cups (2 litres) peeled and cubed peaches (about 1.8 kg / 4 lbs fresh peaches)
- 5 cups (1.25 litres) strawberries, hulled and quartered (about 600 g / 1 lb fresh strawberries)
- 4 cups (1 litre) sugar
- 1/2 cup (125 ml) lemon juice

Preparation

- In a large heavy saucepan, combine all the ingredients. Bring to a simmer, stirring frequently. Attach a candy thermometer in the centre of the pan and simmer until the thermometer reads 104 °C (219 °F). Skim carefully and stir frequently during cooking.
- Pour into the sterilized jars.

An easier way

To easily peel the peaches, blanch them for 1 to 2 minutes in boiling water, place them in cold water, and then remove the skin with the tip of a knife.
