Unlike other types of lettuce, which can become soggy after tossing with dressing, kale keeps its crisp, firm texture, even the following day for lunch. The lentils will not remain crispy but the salad will be just as delicious.

Rehydrating apricots makes them more tender and juicier, similar to the fresh fruit. This also helps to dilute some of the sugar content, making them a little less sweet.
