COUSCOUS

  1. In a small saucepan or microwave, bring the water to a boil. Remove from the heat and add the couscous. Season with salt and stir. Cover and let rest for 5 minutes.

VINAIGRETTE

  1. In a small bowl, combine the lemonade concentrate, balsamic vinegar, honey, oil and orange zest.
  2. Break the couscous grains with a fork. Add half of the vinaigrette and toss gently. Cover and refrigerate for 1 hour.

FRUIT GARNISH

  1. Combine all the fruits with the mint. Add the couscous and stir.
  2. To serve, drizzle with the remaining vinaigrette and toss gently.
  3. Garnish with mint leaves.
