COUSCOUS
1 1/2 cups (375 ml) water
1 cup (250 ml) couscous
Salt
VINAIGRETTE
1/2 cup (125 ml) frozen lemonade concentrate, thawed
2 tablespoons (30 ml) balsamic vinegar
3 tablespoons (45 ml) honey
1 tablespoon (15 ml) canola oil
Grated zest of 1 orange
FRUIT GARNISH
1 cup (250 ml) supremes of orange
1 cup (250 ml) fresh raspberries, whole
1 cup (250 ml) fresh strawberries, quartered
1 nectarine, pitted and diced
1/4 cup (60 ml) fresh mint, finely chopped
Mint leaves for garnish
Preparation
COUSCOUS
In a small saucepan or microwave, bring the water to a boil. Remove from the heat and add the couscous. Season with salt and stir. Cover and let rest for 5 minutes.
VINAIGRETTE
In a small bowl, combine the lemonade concentrate, balsamic vinegar, honey, oil and orange zest.
Break the couscous grains with a fork. Add half of the vinaigrette and toss gently. Cover and refrigerate for 1 hour.
FRUIT GARNISH
Combine all the fruits with the mint. Add the couscous and stir.
To serve, drizzle with the remaining vinaigrette and toss gently.
Garnish with mint leaves.
Personal Note
