COUSCOUS
- In a small saucepan or microwave, bring the water to a boil. Remove from the heat and add the couscous. Season with salt and stir. Cover and let rest for 5 minutes.
VINAIGRETTE
- In a small bowl, combine the lemonade concentrate, balsamic vinegar, honey, oil and orange zest.
- Break the couscous grains with a fork. Add half of the vinaigrette and toss gently. Cover and refrigerate for 1 hour.
FRUIT GARNISH
- Combine all the fruits with the mint. Add the couscous and stir.
- To serve, drizzle with the remaining vinaigrette and toss gently.
- Garnish with mint leaves.
