- In a saucepan, cook the potatoes in salted boiling water until tender, about 20 minutes.
- In a steamer, cook the kale until tender, about 10 minutes.
- Meanwhile, soften the garlic in a little butter. Do not let brown.
- With a masher, mash the potatoes with the garlic and butter. Then, with an electric mixer, purée with the milk. Add the kale and parsley. Continue to beat with the electric mixer to blend in the kale. Season with salt and pepper.
Note
Delicious served with fish, poultry or veal. The cabbage used in this recipe is kale also known as curly cabbage.
