Chicken Filling
- With the rack in the middle position, preheat the oven to 375°F (190°C).
- In a skillet over medium-high heat, brown the onion and garlic in the oil. Add the chicken and cook for 5 minutes or until it starts to brown, breaking it up with a wooden spoon. Add the remaining ingredients. Season with salt and pepper.
- Meanwhile, place the taco shells on a baking sheet. Heat in the oven for 5 minutes.
Toppings
- Place lettuce in each shell and cover with chicken filling. Sprinkle with cheese. Garnish to taste with the remaining ingredients.
