Cajun-Style Chicken Wings

  1. With the rack in the lowest position, preheat the oven to 190 °C (375 °F).
  2. In preparing the wings, you will notice that they have two joints. With a chef's knife, cut the two joints. (You get three pieces for each wing) Throw away the little pointy end where there is no meat. You will get 48 pieces.
  3. In a bowl, combine all the remaining ingredients. Add the chicken and let marinate for 2 to 24 hours in the refrigerator.
  4. Line a baking sheet with parchment paper. Place the wings on the baking sheet. Bake for about 45 minutes.


The amount of Tabasco sauce may surprise you but, surprisingly, it is not that spicy. If you love a thrill, be even more generous.
