16 slices baguette
1 garlic clove, finely chopped
2 tbsp butter
1 cup (250 ml) 35% or 15% cream
1 pinch ground nutmeg
12 cups (300 g) baby spinach
1 log (125 g) goat cheese, cut into 16 slices
Preparation
With the rack in the top position, preheat the broiler.
Place the baguette slices on a baking sheet and toast in the oven.
In a skillet over medium heat, soften the garlic in the butter. Add the cream and nutmeg. Reduce until there’s a little over half the cream remaining.. Add the spinach and continue cooking until the cream has thickened. Season with salt and pepper.
Spread the spinach mixture on the toasts and garnish with a slice of goat cheese. Broil until the cheese is melted.
