- Wash, peel, core and coarsely chop the pears. Place in a saucepan. With a masher or wooden spoon, mash the pears to extract some juice. Bring to a boil. Reduce the heat, cover and simmer for about 20 minutes or until the pears are tender. Stir occasionally. In a food processor or blender, purée the pears until smooth. If desired, pass the purée through a fine sieve, pressing the mixture with the back of a spoon.
- Pour the purée back in the saucepan. Bring to a boil, stirring occasionally. Reduce the heat, simmer gently for about 30 minutes. Add the honey. Bring back to a boil and simmer for about 15 minutes. Pour into sterilized jars. Close the jars and sterilize in boiling water for 10 minutes to ensure a long shelf life. Delicious on toasted bread or on vanilla or chocolate ice cream.
For a different pear butter flavor, add a cinnamon stick or vanilla for the last 15 minutes of cooking.
