Citrus Oil

  1. In a sterilized jar, combine the citrus zests, cinnamon and juniper berries. In a saucepan, heat the oil with the thyme for about 3 minutes. Remove the thyme and let cool. Pour the cooled oil into the jar and close tightly. Let the oil macerate for a few days in the refrigerator. Pass the oil through a very fine sieve or a cheesecloth. Pour into a pretty bottle. Seal. Store in the refrigerator. This oil is very suitable for flavouring fish, duck, poultry and salads dishes.


While removing the zest of the citrus fruit with a vegetable peeler, take care to remove only the colored part of the skin. Avoid the white part as it is bitter and it will bring bitterness to the oil.
