  1. With the rack in the middle position, preheat the oven to 210°C (425°F). Line a baking sheet with parchment paper.
  2. In a bowl, coat the cauliflower thoroughly with the butter. Season with salt and pepper. Transfer the cauliflower to the baking sheet and roast for 25 to 30 minutes, turning frequently, until well browned.
