Ingredients

• MINT ICE CUBES

  • 2 cups (500 ml) water
  • 1/3 cup (75 ml) mint leaves

• CHILLED GREEN PEA SOUP

  • 1 onion, finely chopped
  • 2 garlic cloves, chopped
  • 1 tablespoon (15 ml) vegetable oil
  • 5 cups (1.25 litres) chicken broth
  • 6 cups (1.5 litres) fresh or frozen peas
  • 1/4 cup (60 ml) 35% cream
  • Salt and pepper
  • Fresh mint leaves
