In a skillet or large saucepan, bring the water, maple syrup and soy sauce to a boil. Add the chicken and simmer gently for about 10 minutes. Remove the pan from the heat. Cover and let rest for 10 minutes.
Transfer the chicken to a plate. Cover with aluminum foil and let rest while you prepare the bok choy. Discard the poaching liquid.
