Sauce Vierge
1/2 cup (125 ml) olive oil
2 tbsp (30 ml) walnut oil
2 tbsp (30 ml) red wine vinegar
2 plum tomatoes, seeded and diced
1/2 cup (80 g) diced zucchini
2 tbsp flat-leaf parsley, finely chopped

4 white-fleshed fish fillets
Preparation
Sauce Vierge
In a small saucepan, combine all the ingredients. Bring to a boil and simmer for 1 minute over medium heat. Remove from the heat. Season with salt and pepper and mix well. Let cool.
Fish
Preheat the grill, setting the burners to high. Oil the grate.
Grill the fish for 3 to 5 minutes on each side depending on the thickness of the fillets, or until fully cooked. Season with salt and pepper and transfer to a serving platter.
Drizzle the sauce over the fish and serve immediately.
