- Preheat the oil, setting the fryer to high.
- Drop the sweet potato sticks into warm water and soak for at least 5 minutes. Drain well without letting them dry completely.
- Scatter the sweet potato sticks on a baking sheet and dust with potato starch. Toss. Fry the sticks in 2 batches, until pale gold and crisp, 4 to 5 minutes.
- Remove from the oil and drain on paper towels. Season with salt.
