Barley Pilaf

  1. In a small saucepan, soften the shallot and garlic in the butter. Add the barley and cook for 1 minute. Deglaze with the wine and reduce until almost dry. Add the broth, lemon zest and bring to a boil. Season with salt and pepper. Cover and simmer over low heat for about 45 minutes or until the barley is tender.
