Soybean and Tofu Soup

  1. In a small skillet, gently brown the garlic in the oil. Drain on paper towels. Set aside.
  2. In a saucepan, bring the broth, soybeans and ginger to a boil. Simmer for about 5 minutes or until the beans are tender.
  3. Add the tofu, soy sauce and sambal oelek. Cook gently for about 5 minutes.
  4. Pour into four bowls. Garnish with green onion, cilantro and garlic chips.


Soybeans can be found in Asian grocery stores or natural food stores in the frozen section. Not to be confused with dry soybeans from the legumes family. You can replace them with frozen peas.
