Preparation

  1. In a pan of salted boiling water, cook the chayotes for about 30 minutes or until tender. Drain. Let cool. Peel and cut into cubes.
  2. In a bowl, combine all the ingredients. Season with salt and pepper.
  3. Serve at room temperature.

Note

The chayote is also called christophine in the Caribbean and France. You can also read choko or  cho cho in some recipes that want the same vegetable. It is often used to make soufflés and gratins. It is also often used raw, grated in salads.
