Olive Oil Mashed Potatoes

  1. Place the potatoes in cold salted water and bring to a boil. Cook until tender. Drain. Mash the potatoes, gradually adding the olive oil to get a creamy but firm purée. Season with salt and pepper. Do not overmix.
