Marinara Sauce
2 cloves garlic, finely chopped
2 tablespoons (30 ml) olive oil
19 oz (540 ml) crushed tomatoes with purée
2 tablespoons (30 ml) chopped fresh basil
Salt and pepper
Croquettes
1 can 19 oz (540 ml) white beans, rinsed and drained
1 egg
3 cans 6 oz (170 g) tuna, drained and flaked
1 1/2 cups (375 ml) breadcrumbs
1/3 cup (75 ml) chopped fresh chives
3 tablespoons (45 ml) olive oil
Preparation
Croquettes
In a food processor, purée the beans and egg until smooth. Transfer to a bowl and add the tuna, 125 ml (1/2 cup) of breadcrumbs and the chives. Stir to combine. Adjust the seasoning.
Place the remaining breadcrumbs in a shallow bowl. Set aside.
Shape the tuna mixture into 12 patties with about 60 ml (1/4 cup) each. Coat with the breadcrumbs.
In a large non-stick skillet, brown the patties in the oil for about 3 minutes per side.
Serve with
marinara sauce
and a green vegetable.

Variation
You can also serve the croquettes with tartar sauce. Freezes well.
