Mussels with Parsley Juice

Ingredients

• Parsley sauce

  • 2 cups (500 ml) chicken broth
  • 10 cloves garlic, halved lengthwise
  • 1 cup (250 ml) flat-leaf parsley, firmly packed
  • 1 tablespoon (15 ml) sour cream (optional)

• Mussels

  • 1/2 cup (125 ml) finely diced carrots
  • 1 stalk celery, finely diced
  • 2 lb (1 kg) mussels, bearded and cleaned
  • Salt and pepper
