Vanilla and Star Anise Blueberry Compote

  • Makes 875 ml (3 1/2 cups) 




  1. With the tip of a knife, split the vanilla bean in half and remove the seeds. Set aside.
  2. In a saucepan, caramelize the sugar until golden brown, about 6 minutes. Add the vanilla seeds and pod and the remaining ingredients. Bring to a boil and simmer for about 15 minutes or until the liquid is syrupy. Remove the vanilla pod and star anise.
  3. Serve warm over pancakes.
