Note from Ricardo The Bánh mì is a culinary legacy of the French colonies in Vietnam during the 19th century. It is prepared with local ingredients, but also with liver pâté, cold cuts and baguette made with rice flour. The widespread popularity of Bánh mì in Vietnam now extends to the West, where it is available in a variety of variations. For kids, you can replace the pickled vegetables with julienned carrots or crisp iceberg lettuce. Omit the chili peppers.
