Ingredients
3 cups (300 g) quick-cooking oats
1 ½ cups (45 g) crispy rice cereal (such as Rice Krispies)
3/4 cup (160 g) brown sugar
1/2 cup (65 g) ground almonds
1/4 cup (55 g) unsalted butter
¼ cup (60 ml) almond butter
1/4 cup (60 ml) honey
1/4 cup (60 ml) canola oil
Preparation
With the rack in the middle position, preheat the oven to 350°F (180°C). Butter a 13 x 9-inch (33 x 23 cm) baking dish and line with a strip of parchment paper, letting it hang over two sides.
In a bowl, combine the oats, rice cereal, brown sugar, almond powder and a pinch of salt.
In a saucepan, melt the butter with the almond butter, honey and oil. Pour over the dry ingredients and stir to combine until thoroughly moistened. Spread in the prepared pan and press firmly into an even layer.
Bake for 20 minutes or until the granola is golden. Let cool for about 20 minutes. Unmould onto a work surface and cut into 16 bars. Let cool completely before separating the bars. Store in an airtight container.
