2 teaspoons (10 ml) gelatin
2 tablespoons (30 ml) cold water
6 passion fruit
Juice of 4 oranges
1/2 cup (125 ml) sugar
1/4 cup (60 ml) unsalted butter
3 eggs
3 eggs, separated
1/2 cup (125 ml) sugar
Preparation
In a bowl, sprinkle the gelatin over the cold water. Set aside.
Cut the passion fruit in half. Remove the pulp and seeds with a spoon. In a sieve, press the seeds to extract the juice. Keep the juice and discard the seeds.
In a double boiler, warm the passion fruit juice, orange juice, 60 ml (1/4 cup) of sugar, and butter. Stir until the butter has melted.
In a bowl, beat the 3 eggs and 3 egg yolks with the remaining sugar until light and fluffy. Stir in one third of the warm passion fruit mixture.
Pour the egg mixture into the pan. Stir until it thickens slightly. Remove from the heat.
Dissolve the gelatin in the microwave oven and add to the juice and egg mixture. Stir to combine.
Let cool for 5 minutes before pouring into the crust. Refrigerate for 4 hours.
Beat the egg whites until soft peaks form. Add the additional sugar, beating until stiff peaks form. Spread on the pie and brown under the hot broiler.
