1 1.5 kg chicken
1 onion, cubed
3 Cortland apples, peeled, cored and cut into quarters
3 cloves garlic, chopped
Melted butter
1 1/2 teaspoons (7.5 ml) thyme
1 1/2 teaspoons (7.5 ml) dried savory
Salt and pepper
2 cups (500 ml) sparkling rosé cider
1 bay leaf
Preparation
Preheat the oven to 190 °C (375 °F).
Stuff the chicken with the onion, apples and garlic. Place it in a baking dish. Brush the chicken with melted butter and sprinkle with thyme or savory. Season with salt and pepper.
Arrange the remaining apples around the chicken. Pour the cider over the apples. Add the bay leaf.
Bake for about 1 hour 40 minutes, depending on the size of the chicken. When cutting into the meat, the juices must run clear.
Right out of the oven, remove the bay leaf.
Serve the chicken with the apples and juices. Delicious with potatoes.
