Bean Sprout, Green Apple and Beef Salad

Vinaigrette

Preparation

  1. In a ridged skillet with a little butter on the grill, sear the beef on both sides for about 5 minutes for rare meat. Season with salt and pepper. Let stand for 5 minutes. Slice into thin strips and set aside.
  2. With a mandolin or with a sharp knife, slice the apples into thin julienne strips.
  3. In a bowl, combine the beef, apples, and remaining salad ingredients. 


Vinaigrette

  1. In a bowl, whisk together the ingredients and drizzle over the salad. Toss to combine and adjust the seasoning.
