No-Cook Strawberry Jam

  • Makes about four 250 ml (1 cup) jars

  1. Dice 500 ml (2 cups) of the strawberries. Set aside.
  2. With a potato masher or in a food processor, purée the remaining strawberries with the orange juice. Add the sugar. Add the diced strawberries. Stir to combine and let stand for 15 minutes.
  3. Add the pectin and stir for 3 minutes. Let stand for 5 minutes. Pour into jars and freeze.
  4. The jam will keep in the freezer for 1 year or for up to 3 weeks in the refrigerator. 


To turn this jam into popsicles ...

Combine 500 ml (2 cups) of the no-cook strawberry jam with 750 ml (3 cups) of strawberry yogurt. Pour into Popsicle moulds. Freeze for about 4 hours before unmoulding. Makes 20 popsicles.
