Ginger Lace Cookies

  1. With the rack in the middle position, preheat the oven to 180 °C (350 °F). Line a baking sheet with parchment paper.
  2. In a saucepan, melt the butter, sugar, and honey, stirring until the sugar has dissolved. Remove from the heat and let cool for 2 minutes. Whisk in the flour and ginger.
  3. On a baking sheet, place 15 ml (1 tablespoon) of batter per cookie. Prepare 3 cookies per sheet.
  4. Bake for 4 to 5 minutes, until lightly browned. Take out of the oven, let cool for about 2 minutes on the baking sheet, then loosen the cookies with a spatula. While still warm, shape into tuiles, tulips, or cigarettes. Cool and unmould. 


Step 4
It is easier to work with two sheets at once. After placing a first sheet in the oven, prepare in a second one right away. When the cookies are ready, bake the second sheet, then shape the cookies of the first.
To serve the tulips, fill them with vanilla ice cream and drizzle with a touch of honey. They can also be filled with sorbet, fruit, and chocolate sauce.
