Cardamom Crème brûlée...
Replace the vanilla with 2.5 ml (1/2 teaspoon) of cardamom seeds and let steep covered for 5 minutes. Strain the flavoured milk through a sieve lined with cheesecloth and continue with the recipe.
Cinnamon
Replace the vanilla with 5 ml (1 teaspoon) of cinnamon and let steep covered for 5 minutes. Strain the flavoured milk through a sieve lined with cheesecloth and continue with the recipe.
Ginger
Replace the vanilla with 3 or 4 slices of fresh ginger. Remove from the cream before adding to the egg yolks.
