Frozen Pineapple Sticks

  1. Line a small baking sheet or a large plate with parchment paper.
  2. Peel and cut the pineapple into 2-cm (3/4-inch) thick strips. Cut each strip into two sections.
  3. In a dish, cover the pineapple with the sugar. Macerate for about 30 minutes or until the sugar has almost completely dissolved. Insert Popsicle sticks at the base of each piece of pineapple. Place the pineapple sticks, side by side on the baking sheet. Cover and freeze for about 4 hours.
  4. Let rest for about 5 minutes at room temperature before serving. 



Add lime zest or juice during maceration.
