We harvest garlic flowers while still in bud in late June. We chop them with their stems and pack them in jars with oil. This condiment will keep for up to one year in the refrigerator, after opening. You can find garlic flowers in fine grocery stores and some supermarkets. The advantage is that you can always have it on hand and are more digestible than the roots.
